Texas-Size Peanut Smoothie Bowl Recipe

You may need a large spoon for my Texas-size peanut smoothie bowl.

2017, I took a peanut tour in Lubbock, Texas, with the Texas Peanut Producers Board. They brought about ten lifestyle bloggers to Lubbock to tell us about the peanut industry in Texas. Did you know (I didn’t) that just outside of Lubbock is home to the most abundant peanut crops grown in Texas? If you didn’t know, Texas is the second-largest peanut-producing state in the nation (as of 2017).

Texas-Size Peanut Smoothie Bowl Recipe

When we were there, we learned how farmers rely on their peanut crops to pay the bills and how important it is to their livelihood. I certainly can respect that. They wanted us to create a recipe using peanuts, so I did. Below is my Texas-size peanut smoothie bowl recipe. I hope you enjoy making it. But first, I’d like to tell you about peanuts grown in Texas.

Facts About Peanuts Grown in Texas

Did you know peanuts are grown in the ground? I bet you thought they grew on trees. I bet you also thought peanuts were in the nut family. They are not. Peanuts are related to the bean family, which makes them legumes.

Did you know there are four varieties of peanuts? The Runner Peanut, Virginia Peanut, Spanish Peanut, and the Valencia Peanut. Texas is the only state to produce all four types of organic peanuts.

On average, Texas farmers plant about 200,000 acres of peanuts each year. This was reported in 2017.

Fact: Americans consume more than 600 million pounds of peanuts and 700 million pounds of peanut butter yearly.

The Texas Peanut Producers Board in Lubbock is a non-profit association that helps peanut farmers’ with their concerns and hardships, if any, and supports the peanut industry in Texas.

Texas-size Peanut Smoothie Bowl

Ingredients
  

  • 1/4 cup unsweetened almond milk
  • 1 frozen banana
  • 1 cup sweet potatos cooked
  • 1/2 cup smooth peanut butter
  • 1/3 cup frozen apple chunks
  • 3/4 tsp ground cinnamon

Toppings

  • plain Greek yogurt optional
  • shreddered coconut
  • 1 tbsp peanuts
  • 1 tbsp walnuts
  • raisins

Instructions
 

  • Add all ingredients into a blender; blend until smooth. Serve with toppings.
